 Rays Favorite Soup

I used to call this peasent soup, but my second best friend, ( my best friend is Claudia) and golfing buddy, Ray, likes this soup so much that I decided to name it after him.  If you visit us, I will not only make you this soup, I will also introduce you to Ray!

Ingredients:

INGREDIENTS

1 1/2 pounds sweet Italian sausage

3 cloves garlic, chopped fine

1 medium onion, chopped fine

1 chopped carrot

1 chopped green pepper

1 large can chicken broth

1 large can chopped tomatoes

1 can drained white beans

1 1/2 cups water

2 boxes frozen chopped spinich

 



Directions:
Brown first five ingredients in Dutch oven.  Drain, return to pan.  Add all ingredients except spinich to sausage mixture.  Bring to light boil and simmer a while.  Add spinich, cook until heated through.  Add two cups egg bow pasta if you want a one course meal.  Enjoy with crusty bread by the fire and let it snow!
