Great Apple Muffins

Do not be surprised if these are some of the best muffins you have ever eaten! They do take a while to make and the batter is thick, but I do think you will find that they are well worth your effort. Eat warm with the Sunday paper!

Ingredients:
2 cups flour
1/2 teaspoon salt
3/4 cup brown sugar
1/2 teaspoon ground clove
1 1/2 teaspoon ground cinnamon
1/8 teaspoon nutmeg
2 teaspoons baking soda
2 cups coarsely chopped apples
1/2 cup raisins
1/2 cup walnuts
3 eggs
4 ounces cream cheese, softened and cut into small pieces
1/2 cup melted butter
1/2 teaspoon vanilla

Topping
1/2 cup walnuts
1/4 cup flour
1 teaspoon grated lemon peel
1/2 cup brown sugar
1 teaspoon cinnamon
1 ounce melted butter

Directions:
Preheat oven to 375. Combine topping ingredients until crumbly and set aside. Combine flour, salt, sugars, spices and baking soda and set aside. Combine apples, raisins, walnuts, eggs, cream cheese, butter, and vanilla. Add dry ingredients, a little at a time, to apple mixture. Stir until just combined. Portion batter into prepared muffin tins. Sprinkle with topping. Bake 20-30 minutes, until light brown on top. Recipe can be doubled and muffins freeze well. Enjoy!
